Description
When the maison Louis Jadot decided to create an accessible red Burgundy but true to the Burgundy soul, Louis Jadot Bourgogne Couvent des Jacobins Rouge was born. Named after the former 15th century Dominican convent that today houses its headquarters in Beaune, this wine pays homage to the monastic tradition that preserved the art of winemaking in Burgundy. Made exclusively from Pinot Noir, it comes from selected vineyards, mostly from the Côte Chalonnaise, an area less well known than the Côte d'Or, but rich in clay-limestone soils and a temperate continental climate that allows for slow and balanced ripening.
To guarantee quality and traceability, Louis Jadot built a dedicated cellar in Givry, which allows them precise control over the vinification of this cuvée. A strategic choice that speaks of their commitment to authenticity, even in their most accessible wines.
Winemaking
The vinification of Louis Jadot Bourgogne Couvent des Jacobins Rouge follows traditional methods: partial destemming, fermentation in open tanks with pumping over and gentle pigeage, seeking to extract the essence of the Pinot without altering its finesse. Ageing lasts 8 to 10 months, in a balanced mix of oak barrels from its own cooperage and stainless steel tanks, to preserve the freshness of the fruit without sacrificing a certain structure.
Taste
On the nose, Louis Jadot Bourgogne Couvent des Jacobins Rouge offers a classic, restrained expression: wild raspberry, fresh red cherry and a hint of dried violet. With some air, earthy, autumn leaf and undergrowth nuances emerge, adding depth. On the palate, it is light, precise and juicy, with fine tannins and a lively acidity that supports the wine with elegance. The finish is clean and persistent, with hints of mild spices, clove and pomegranate, completing a sober, harmonious and typically Burgundian profile. Ideal with white meats, terrines or roast poultry dishes, its versatile character and purity make it an entry-level Pinot Noir with a true local identity.
