La Borderie Val Moré Extra Brut is a champagne of exceptional quality, which stands out for its unique character. This Blanc de Noirs Millésimé is made exclusively from Pinot Noir, a grape variety that gives it a distinctive profile, which comes from the "Val Moré" plot in Bar sur Seine.
Winemaking
Only the must from the cuvées is used, and malolactic fermentation is carried out in stainless steel tanks, with 5% in oak barrels, where this fermentation is blocked. This process adds complexity and structure to the wine. A crucial aspect in the making of this champagne is its ageing, which lasts 55 months in the cellar, allowing the wine to fully develop its flavours and aromas. The final dosage of this champagne is 3 g/l (Extra Brut), which indicates a very low level of added sugar, contributing to its clean and refined flavour profile.
