Description
La Borderie Douce Folie Rosé Extra Brut is a unique expression of viticulture and oenology. This wine, made exclusively from Pinot Noir, comes from a dedicated vineyard in Merrey sur Arce, with vines over 50 years old. The south-western location of this vineyard ensures optimal ripeness of the grapes, resulting in a wine of character and depth.
Winemaking
The winemaking of this wine is a careful and detailed process. The maceration of the grapes lasts approximately 48 hours in stainless steel tanks, interrupted when the desired colour is reached. Subsequently, malolactic fermentation takes place, also in stainless steel tanks. This wine spends 24 months ageing in the cellar, which contributes to its complexity and character. With a final dosage of 4 g/l of sugar (Extra Brut), this wine has a dry and refined profile.
Taste
Borderie Douce Folie Rosé Extra Brut is characterised by its light colour and medium depth. On the nose, floral notes of violet and fresh fruits such as raspberry, blackcurrant and cherry stand out. Mineral notes are also perceived, providing an expressive, fine and delicate aromatic expression. On the palate, the wine opens smoothly, with a creamy effervescence and a fleshy texture. Its acidity and vinous character make it gourmet and fruity, ideal to accompany a variety of dishes, from Iberian ham and cured meats to beef carpaccio and tiramisu with strawberries.
