Description
In Burgundy, elegance is not proclaimed: it is demonstrated by an almost obstinate loyalty to the vineyard. At Maison Drouhin, this philosophy is both heritage and method: the minimum of intervention so that the vineyard can speak with its own voice. This way of understanding wine is embodied in Véronique Boss-Drouhin, an oenologist marked by the region from the very beginning: she was born in Beaune, on the same day that the famous Hospices auction was exceptionally postponed, a coincidence that is always considered at home as a wink of fate. Years later, she was the only woman in her oenology class in Dijon, and that quiet determination is evident in Drouhin's style: precision, purity, zero make-up.
Joseph Drouhin Côte de Nuits Villages is Pinot Noir in its purest form, and its identity is born of a very Burgundian decision: to bring together the pulse of several villages in the south of the Côte de Nuits - Corgoloin, Comblanchien, Premeaux, Brochon, Couchey - to capture a common line of limestone slopes. Here the clay-limestone binomial rules, soils that tighten the wine, refine the tannin and provide that undertone of wet stone and chalk that ensures the fruit is never strident. A continental climate, centuries-old tradition and an appellation designed to showcase the DNA of the Côte de Nuits without the need for grandiloquence: a red wine from Burgundy with a scalpel, not a broad brush.
Winemaking
At Joseph Drouhin Côte de Nuits Villages, the grapes are harvested by hand in aerated crates, carefully selected to preserve only the healthiest grapes. In the cellar, the grapes are completely destemmed in order to achieve aromatic definition and a finer feel. Fermentation and maceration lasts between 2 and 3 weeks in small open vats, alternating punching down and pumping over with a clear objective: to extract without hardening, to build structure without losing transparency. Pressing is done in a vertical press and, by tasting, the final fractions are set aside to avoid sharp edges. Ageing continues in French oak barrels, with a portion of new wood contained, for 12 to 16 months, refining the wine without overpowering it.
Taste
The colour of Joseph Drouhin Côte de Nuits Villages is bright ruby. The nose opens with crisp red cherry and fresh raspberry, followed by fine liquorice and mild spices. With air, notes of undergrowth, dried leaf and a hint of mushroom appear: that earthy dimension that in Pinot Noir is not ornamentation, but depth. Silky on the palate, with polished tannin and precise acidity: more athletic than full-bodied. The fruit remains in its natural register, small and crisp, and the finish leaves a trail of light salinity, chalky minerality and lingering red fruits that return just when you thought the drink was over.
