From Emmanuel Lassaigne 's first steps in Montgueux, the Jacques Lassaigne Autour de Minuit project was born as a bold reverence for the terroir of the Bas Aube. Inspired by the mythical hill of Montgueux, nicknamed the "Montrachet of Champagne", Emmanuel decided to pay homage to its purest essence. The idea came during an autumn harvest: tasting the deep character of barrels that had contained Vin Jaune, he realised that this imprint could give his champagne an unprecedented dimension. So, with a single varietal - 100% Chardonnay - grown on chalk and limestone clay soils, under a mild climate and orientations that favour slow ripening, a blanc de blancs took shape that reflects the mineral soul of the place.

Winemaking

Jacques Lassaigne Autour de Minuit is an exercise in patience and minimalism. After manual harvesting, the grapes are gently pressed with almost no added sulphites. Fermentation takes place in used Vin Jaune barrels, which gives the wine a unique character. Ageing takes about three years on the lees, without filtering or fining, and disgorging is done by hand. There is no dosage at bottling, which reinforces its naked, direct and precise character. Each decision seeks to respect the energy of the vineyard and to offer a Champagne that does not disguise its origin.

Taste

The sensory experience of Jacques Lassaigne Autour de Minuit is complex and enveloping. On the nose, notes of ripe apple, white plum and candied lemon intertwine with hints of fresh walnuts, toast and a subtle oxidative nuance, a legacy of the Vin Jaune barrels. On the palate the texture is creamy, almost fleshy, supported by a vibrant acidity that adds tension and dynamism. The chalky minerality of Montgueux runs through each sip, bringing salinity and a freshness that lengthens the finish. The persistence is sharp, marked by echoes of citrus fruits, dried herbs and a spicy background.
