The latest release of the NV Extra Brut Blanc de Blancs Le Cotet was disgorged in March, and it's based on the 2015 vintage, with some 10% older bottled wines that have been 'remise en cercles.' Offering up lovely aromas of lemon oil, white flowers, mandarin and pear, along with some autolytic top notes of warm bread, the wine is medium to full-bodied, vinous and structured, with a racy spice of acidity, a tightly wound core and a long, chalky finish. It's a powerful but tensile Blanc de Blancs that comes from a plot of old vines planted in 1964.

High above Montgueux, where heavy clay and white chalk soils cut the hillside with an almost lunar-like rawness, Emmanuel Lassaigne continues the legacy of his father Jacques with a radical and deeply personal vision of Champagne. Jacques Lassaigne Le Cotet is the easternmost parcel of the domaine, a lonely, craggy vineyard where Chardonnay vines, more than 40 years old, sink their roots into pure chalk soils. It is here, far from the hustle and bustle of the Côte des Blancs, that Emmanuel found his voice: no concessions, no make-up, letting the vines and the soil speak without interference. His decision not to add sulphites to the blend was seen at the time as heresy in Champagne. Today, that boldness translates into one of the most honest, vibrant and sharp expressions of the Montgueux terroir.

Winemaking

Harvesting is done by hand, only when the grapes reach optimum physiological ripeness. After destemming and gentle pressing, the must ferments naturally and undergoes full malolactic fermentation, giving a fuller texture without sacrificing freshness. Jacques Lassaigne Le Cotet is aged for 12 to 24 months in new and used barrels, which gives it complexity without overloading its mineral character. It then spends 1 to 5 years in bottle before disgorgement. No sulphites are added to the blend, reaffirming Emmanuel's commitment to pure, unadulterated expression. With no expedition liqueur added, this Extra Brut is presented without disguise, a direct translation from the Le Cotet vineyard to the palate.

Taste

Jacques Lassaigne Le Cotet is a Champagne of surgical tension and purity. On the nose, an initial impression of wet chalk, lemon rind and acacia blossom gives way to more subtle notes of green apple, raw almond and a saline note reminiscent of the Atlantic breeze. On the palate, the attack is sharp, linear, almost electric. The bubbles are fine, perfectly integrated, barely a murmur that accompanies the raw expression of the Chardonnay. There is a firm acidity that cleanses the palate like a razor blade, prolonging a finish with citrus peel, wet stone and a lingering salinity, almost umami. This is not a Champagne of concessions or embellishments. It is austere, vibrant and precise, ideal for those in search of the naked truth of terroir, especially with oysters, sea urchins or any other morsel from the sea.
