This wild rosé is born of a desire to go beyond the technical, to let emotion guide the blending. Instead of following a recipe, Emmanuel listens to the wine, observes it, lets it speak. This is how this cuvée came about: from intuition and from a vintage that asked to be different. Here is Pinot Noir - intense, muscular - and Chardonnay - sharp, electric - both grown without artifice, in plots where life expresses itself without make-up. Montgueux, often called the Montrachet of Champagne because of its chalky, sunny profile, gives the wines a unique tension, a cutting minerality that acts as a backbone here.

Winemaking

The grapes for Jacques Lassaigne Sauvage Rosé Wild Is The Wind Version 20, harvested by hand with surgical precision, are vinified with minimal intervention. Part of the Pinot Noir is macerated briefly to add colour and structure, without overloading with fruit. Fermentation is carried out with indigenous yeasts, with no added sugar or corrections. The wine then rests on fine lees, developing texture and complexity, before its second fermentation in bottle under the champenoise method.Version 20" refers to the specific blend of the year, always evolving, never replicable. Disgorgement is done without dosage: this is a brut nature rosé, sharp and honest.

Taste
