The new disgorgement of Lassaigne's emblematic NV Extra Brut Blanc de Blancs Les Vignes de Montgueux is a blend of the 2020, 2019 and 2018 vintages, from vines that range between 45 and 70 years old growing on the slopes of Montgueux. Offering up aromas of pear, crushed mint, bread dough and white flowers, it's medium to full-bodied, vinous and incisive, with a satiny attack that segues into a taut, racy mid-palate, concluding with a pungently saline finish. It's an especially strong rendition.

Description
In the rolling hills of Montgueux, where the wind scrapes the surface of the chalky earth and the sun slowly ripens the clusters, Emmanuel Lassaigne has turned his father Jacques Lassaigne 's legacy into a bold expression of viticultural freedom. The vineyard, planted entirely with Chardonnay on heavy clay and chalk soils, sits on a geological island at the gateway to Champagne, a blessed anomaly more reminiscent of the best terroirs of the Côte des Blancs than its immediate surroundings. Here, where 35-year-old vines stubbornly sink their roots, Jacques Lassaigne Les Vignes de Montgueux is born, a Blanc de Blancs that defies the rules without losing an ounce of identity.
Emmanuel decided from the outset to work without a net: no added sulphites, natural fermentations and minimal intervention. A revealing anecdote: in a difficult vintage, he refused to bottle a whole parcel because "it did not speak honestly". This radical, almost poetic gesture sums up his vision: the wine must be true to the vineyard, with no make-up, no concessions.
Winemaking
Jacques Lassaigne Les Vignes de Montgueux is made from grapes harvested by hand at exactly the right point of ripeness from nine different sites. They are destemmed and gently pressed before undergoing full malolactic fermentation. No sulphites are added at any stage of the process, allowing the fruit to express itself with absolute transparency. The wine is aged for 12 to 24 months in a combination of new and used barrels, where it rests on the lees, gaining texture, tension and depth. It then remains in bottle for between one and five years until disgorging, refining its character until it reaches the extreme clarity that defines it.
Taste
Jacques Lassaigne Les Vignes de Montgueux opens with a sharp, almost saline nose, where dried citrus, lemon zest and white grapefruit intertwine with notes of wet chalk, almond zest and a hint of dried fruit. The palate is an arrow: direct, lively, unadorned. The bubbles are fine, nervous, carved. Hints of green Melon, sour apple and wilted white flowers float up, supported by a sharp minerality reminiscent of iron and limestone. The finish is dry, long, electrifying, with a tension that lingers and seduces. Ideal with raw seafood, but also perfect on its own, when you want to drink with an alert mind and palate.
