The NV Fino La Panesa is a reference for old Fino, pushing the limits of biological aging. Bottled at an impressive old age of 15 years from a solera created in 1961, it shows a deep golden color and a nose full of dried nuts (hazelnuts), elegant, complex and balanced, with intense salinity, pungent flavors, a full, wide palate and great length. This is a superb example of how to control the power of very old, biological Sherries. As with most of the NV wines, it’s impossible to distinguish the different bottlings so it’s hard to give a drinking window, because you’ll not know how old the bottle you have is, but the wine has the stuffing to last and even improve for a good five years. This is one of the greatest Finos in existence today. Drink 2013-2018.

Description
From its origin, Hidalgo Fino Especial La Panesa embodies patience as an oenological virtue. It was born in Bodegas Hidalgo as a bold bet: to take biological ageing to the limit, keeping the flor alive for more than 15 years. In a world where fino is bottled young, this solera - named after a historic vineyard linked to the family - defies time and the norm. Pure Palomino, aged under veil in century-old oak vats, nourished by the humid air and sea salt of Sanlúcar, but with a depth and evolution that sets it apart from any conventional fino. The albariza soil, the temperate Atlantic climate and the knowledge inherited from generations form the backbone of this unique wine, whose slow, precise winemaking pays homage to the most demanding tradition of the Jerez region.
Winemaking
Made entirely from Palomino grapes, Hidalgo Fino Especial La Panesa is aged under the traditional criaderas y solera system, with meticulous monitoring. The sacas are minimal, intentionally spaced, allowing for a prolonged evolution of the velo de flor in centenary casks. This sustained contact with the live yeasts confers complexity, texture and a structure that few finos achieve. As the flor ages and weakens, subtle oxidative nuances emerge that enrich its character. It is not subjected to stabilisation or aggressive filtering: it is bottled respecting its authenticity.
Taste
In the glass, Hidalgo Fino Especial La Panesa displays a clean, bright, old gold colour. On the nose, the impact is profound: sourdough bread, toasted almonds, ripe yeast, saline touches, dry hay and a subtle note of peat. There are echoes of baked apple, citrus peel and green olive. The palate is dry, elegant, with medium volume and a creamy texture that contrasts with its lively salinity. The acidity, perfectly integrated, guides a long and persistent finish with hints of dried fruits, dried flowers and that unmistakable saline aftertaste. La Panesa is not a fino for beginners: it is a radical expression of what biological ageing can be when time is allowed to speak.
