Description

The Emilio Hidalgo winery, in the heart of Jerez de la Frontera, works with the conviction that wine should speak of the sun, the weather and the soil. Hidalgo Pedro Ximénez was born from a bold decision: to let the grapes dry in the sun, as in the olden days, until the sugar condenses in the very heart of the fruit. This sun-drying technique, inherited from generations, gives rise to a wine that does not seek to be light or indulgent, but deep, voluptuous and honest. The vines grow on soils of albariza, a white, porous soil that absorbs sunlight and returns it at night, helping to preserve the natural acidity. The Atlantic breeze tempers the hot days. The result: a wine that honours the legacy of the Marco de Jerez, with body, character and a sweetness as dark as it is hypnotic.

Winemaking

After the harvest, the grapes destined for Hidalgo Pedro Ximénez are sun-dried for several days. This process concentrates their natural sugars and seals the wine's identity from the very first step. They are then gently pressed and the must partially ferments, leaving a high residual sugar content. The wine is incorporated into a traditional system of soleras and criaderas, where it ages slowly in used oak barrels, allowing Hidalgo Pedro Ximénez to gain depth without losing freshness. The balance between oxidation, sweetness and structure is polished with patience, without rushing.

Taste

In the glass, Hidalgo Pedro Ximénez has a dense mahogany tone, with dark amber reflections. On the nose, intense aromas of sultanas, dried figs, dates, molasses and bitter cocoa unfold. Notes of roasted coffee, walnut and caramel also emerge. On the palate, it is unctuous, silky, with a glyceric texture that caresses the palate. The moderate acidity gives it freshness and prevents the sweetness from overpowering. The finish is long, lingering, with hints of dark chocolate, candied orange peel and toasted nuts. A voluptuous wine, perfect to accompany blue cheeses, nutty desserts, or simply to end an evening with a pause, alone or in good company.
