The wine bottled as NV El Tresillo 1874 Amontillado Viejo is believed to be around 50 years average age, reminded me of the sweet, fruity aromas of peaches in syrup and red cherries, in a very elegant, subtle way. Of course, all the hazelnuts, marmalade and smoky overtones are there and the palate reveals a completely dry, warm, smoky wine, long and intense, with power and balance. A delicate old Amontillado. Drink 2013-2019.

Description
In the heart of Sanlúcar de Barrameda, the history of Bodegas Hidalgo is intertwined with patience and the passage of time. Founded in 1792, in 1874 the company created a solera designed to express the complexity of the Palomino grape when it undergoes a double ageing process: first under flor and then in oxidative ageing. Hidalgo Amontillado Viejo el Tresillo 1874 -a name that alludes to an old card game- also represents this playful and familiar tradition, the art of drinking without haste and with an awareness of the past. This wine comes from albariza soils, rich in calcium, in the Jerez area, where the Atlantic climate provides balance, salinity and natural structure.
Winemaking
The Palomino grapes are fermented in stainless steel tanks and begin their ageing under flor, developing the finesse and sharp character that defines Finos. Over the years, this phase gives way to a long oxidative ageing that adds depth, colour and evolved aromas. Hidalgo Amontillado Viejo el Tresillo 1874 is aged using the traditional system of criaderas and soleras, combined with some exceptional vintages, in a masterful blend that today has an average age of over 50 years. It does not undergo stabilisation, allowing each bottle to retain the intensity and complexity of time.
Taste
Hidalgo Amontillado Viejo el Tresillo 1874 has a reddish mahogany tone with coppery reflections, bright and clean. The nose is enveloping, penetrating and very expressive: dried fruits (almond, walnut), orange peel, vanilla, fine varnish and saline touches, with echoes of noble woods and sweet spices. Dry, full-bodied and structured on the palate, with a lively acidity that balances its ageing. Flavours of hazelnut, dry caramel, citrus peel and a light smoky note intertwine in a long, elegant and persistent finish. A deep, complex and vibrant wine, ideal to enjoy on its own or to accompany stews, game meats or very cured cheeses.
