The NV Privilegio is a very old Palo Cortado that has a textbook profile of old Sherry with a sweetish twist, a creamy nose of hazelnuts and a touch of varnish, marmalade and a spirity hint. It is very balanced for a really old wine. It's not easy to find such great harmony in a concentrated, extremely old wine like this one. It has a medium to full-bodied palate with some notes of balsam (mint?) and a slightly bitter flavor (Seville oranges) with a dry, chalky finish. A superb Palo Cortado.

Description
The story of Hidalgo Palo Cortado Privilegio 1860 begins with a decision that few dare to take: to preserve and nurture for more than a century a legendary solera born in the heart of the Jerez region. In 1860, Emilio Hidalgo created the Privilegio solera, on which this very old Palo Cortado, made with Palomino grapes from the albariza soils that give identity to the wines of Sanlúcar and Jerez, would rest. Here, time is the main oenologist: there is no rush, no interference, only the will to let the wine mature slowly under oxidative ageing. Only 150 bottles are bottled by hand twice a year, without stabilisation or filtering. Each glass is a living testimony to generations of patience.
Winemaking
Hidalgo Palo Cortado Privilegio 1860 is not born from a fixed formula, but from the observation and intuition of the foremen who select butts with a singular profile: the aromatic finesse of an amontillado and the deep body of an oloroso. The ageing is exclusively oxidative, for more than 50 years, in old oak casks, under natural cellar conditions. The result is a concentrated, stable wine that needs no touch-ups. It is bottled by hand, without filtering, so it can present noble sediments: witnesses of the passage of time.
Taste
Dark mahogany with reddish reflections, clean and bright. On the nose, Hidalgo Palo Cortado Privilegio 1860 is deep and fragrant: notes of toasted hazelnut, walnut, noble woods, aged tobacco, bitter cocoa, dark sultanas and candied orange peel. The palate is powerful, dry and structured, but also vibrant, with a surprising acidity that keeps it lively and fresh. Flavours of coffee, toffee, burnt caramel, with a saline and spicy background. The finish is timeless, complex, slightly bitter and elegantly rancid, with echoes of dried fruits and old wood. A wine that demands attention and rewards with emotion, ideal for cured cheeses, foie gras or simply to contemplate bottled time.
