The Emilio Hidalgo sherry lineup is first class, considerably less expensive than the above star of the portfolio, and very much worthy of consumer attention. The first vintage of the 1861 Santa Ana Pedro Ximenez was bottled in 1861 when the solera was originated. The wine rests in very old 500-liter American oak barrels. This nearly black-colored wine is super-fragrant with notes of dates, figs, molasses, and assorted dried fruits. Thick, rich, and viscous, the wine is very intense and exceptionally long. Words can hardly do it justice.

Description
Born from the very soul of Jerez, Hidalgo Pedro Ximénez Santa Ana 1861 is a wine that is not made: it is inherited. The Hidalgo family, rooted since the 19th century in the Añina estate, decided to pay tribute to their legacy by rescuing a sleeping oenological jewel from its oldest soleras. This Pedro Ximénez was not born out of urgency, but out of respect. One afternoon, rummaging through forgotten butts, the question arose: "What wine would speak of us when we are no longer around? Thus was born the idea of sharing, in tiny quantities, this liquid heritage. Made exclusively from overripe, sun-dried Pedro Ximénez grapes, it is the purest reflection of the warm climate, the albariza soils and the silent history that lies within the century-old walls of the bodega.
Winemaking
Each year just two sacas of 150 bottles of Hidalgo Pedro Ximénez Santa Ana 1861 are made, filled by hand as in centuries past. The wine comes from a single very old solera, with an average age of over 50 years. The ageing is carried out in American oak barrels, under oxidative ageing, allowing time to do its work without shortcuts or modern manipulations. The density of the must, combined with the very slow evolution, generates layers of complexity that only the passage of decades can build. Bottling, straight from the butt to the bottle, without filtering, maintains all its authenticity.
Taste
Dark, almost black, with iodised edges, it announces its unreserved ageing. On the nose, Hidalgo Pedro Ximénez Santa Ana 1861 displays a symphony of sultanas, dried figs, caramel, roasted coffee, bitter chocolate and sweet spices. An ancient, noble perfume, without artifice. On the palate, it is pure silk: dense, enveloping, with a sweetness balanced by an invisible but effective acidity. Notes of molasses, raisined fruit, sweet tobacco and noble woods accompany a timeless finish. It is a wine for contemplation, not for haste. Served in a wide glass, at 14ºC, it reveals its soul slowly. Hidalgo Pedro Ximénez Santa Ana 1861 is not a wine for every day, it is a stopped moment, a living relic that demands respect and silence.
