Description
Giboulot Saint-Romain Rouge En Chevrot is an exceptional wine from the Burgundy region, specifically from the Saint-Romain appellation, located in the Côte de Beaune. This wine, made by the renowned winemaker Emmanuel Giboulot, stands out for its commitment to biodynamic viticulture, without the use of chemicals or additional oenological products. The grape variety used is 100% Pinot Noir, a variety that perfectly reflects the characteristics of the terroir. The vineyards are located on steep slopes, between 280 and 450 metres above sea level, with clay-limestone soils and white marl, which gives the wine its particular minerality.
Winemaking
The vinification is handmade: manual harvesting, 50% destemming, and fermentation with indigenous yeasts in old barrels. The wine is aged for 12 months in oak barrels, where it matures on its fine lees.
