Description
Giboulot Côte de Beaune Blanc La Grande Châtelaine is a 100% Chardonnay white wine from Domaine Emmanuel Giboulot, known for its pioneering approach to biodynamic and organic viticulture. Emmanuel Giboulot began his career in Beaune in 1985, following in the footsteps of his father, who had been practising organic farming since the 1970s. The vineyards of La Grande Châtelaine are located on the slopes of the Montagne de Beaune, a small appellation in the Côte de Beaune covering just 52 hectares. The vineyards are on average 30 years old, situated on clay and limestone soils, with some white sandstone, which contributes to the minerality of the wine.
Winemaking
The grapes are harvested by hand, followed by direct pressing of the whole grapes. Fermentation is carried out in used oak barrels, with indigenous yeasts, without the intervention of chemical products. This process ensures that the wine retains its purity and faithfully reflects the terroir of the region. Finally, the wine is aged for 12 months in barrels on its fine lees, which gives it body and complexity.
Taste
Giboulot Côte de Beaune Blanc La Grande Châtelaine presents a complex range of floral and stone fruit aromas, such as peach and plum, accompanied by subtle notes of hazelnut and vanilla. On the palate, it has a creamy texture with a very marked mineral touch, which balances its acidity. The finish is persistent, leaving a pleasant sensation of freshness and opulence, making it ideal for pairing with fish, seafood and cheeses such as Comté. This biodynamic wine is an excellent choice for those seeking authenticity and respect for the environment.
