Giboulot Côte de Beaune Rouge Les Pierres Blanches is a Pinot Noir from Burgundy, specifically from the small appellation Côtes de Beaune. Emmanuel Giboulot, its creator, is known for his biodynamic practices, which he implemented in his vineyards after obtaining certification in 1996. The vineyard of Les Pierres Blanches is located at an altitude of between 300 and 370 metres, on clay-limestone slopes. It is divided into two parts: one planted in 1962 and the other in the early 2000s.
Winemaking
The vinification of Giboulot Côte de Beaune Rouge Les Pierres Blanches is characterised by a manual harvest, followed by destemming and fermentation in old barrels for almost three weeks. Ageing lasts between 12 and 18 months, depending on the vintage, with the wine resting on its fine lees, which gives it its complexity and elegance.
