Description
On the slopes of Beaune, where limestone mingles with clay and the sun gently caresses the vineyards at an altitude of 220 to 300 metres, Frédéric Cossard found an unexpected place for Chardonnay at Les Bressandes. This climat, famous for its reds, reveals in Cossard's hands a surprising white facet: pure, vibrant, deeply mineral. Vines more than 50 years old sink their roots in a mosaic of soils - limestone at Altura, loam in the centre, clay at the foot of the slope - giving life to a wine that defies labels and reflects, with brutal fidelity, its origin.
Winemaking
True to its philosophy of minimal intervention, Frédéric Cossard Beaune Les Bressandes Blanc is vinified with whole clusters and spontaneous fermentations, without the addition of sulphites or corrections. The must ferments freely with its indigenous yeasts, preserving the natural energy of the fruit. The wine then ages for about a year in used oak barrels, where it rests on its fine lees without racking or fining, refining in silence. This discreet ageing adds texture without stealing the limelight from the character of the place.
Taste
Frédéric Cossard Beaune Les Bressandes Blanc opens with a restrained, elegant nose: citrus peel, white flower, fresh butter and a trace of wet stone. On the palate, it is precise, with a lively tension reminiscent of a knife edge: lemon, chalk, green apple and a lingering salinity that lengthens the finish. It does not seek opulence, but balance. The texture is creamy but restrained, guided by a firm acidity that invites the next sip. A Burgundian white that speaks softly, but says a lot. Ideal for those who are looking for an authentic wine, with depth, without make-up.
