Description
Frédéric Cossard is not a conventional winegrower. Before making wine, he used to sell houses. But his obsession with terroir led him to found Domaine de Chassorney in Burgundy and then to explore Beaujolais with the same radicalism: natural winemaking, without sulphites or artifice, letting the grapes and the soil speak without filters. In Fleurie - the most delicate and floral cru in northern Beaujolais -he found an ideal terroir to express his vision: Gamay vines grown on pure granite, on airy slopes that lend tension and finesse to the fruit.
Winemaking
Frédéric Cossard Fleurie is made from a strictly manual harvest, with selection in the vineyard. It is vinified by carbonic maceration for 15 days with whole bunches, without destemming, following ancestral methods. Fermentation starts spontaneously with indigenous yeasts. The wine then ages for 12 months in cement eggs, a neutral vessel that allows slow micro-oxygenation, refining textures without adding aromas. No filtration or sulphite: just fruit, soil and time.
Taste
Frédéric Cossard Fleurie presents itself with a precise and vibrant fragrance: raspberries, red cherry, violet petals and a faint trace of white pepper. The nose is all purity and freshness, with mineral echoes evoking hot stone and damp earth. On the palate, the wine is agile, juicy, with a lively acidity that structures without weighing it down. The tannins are very fine, almost tactile, giving way to a delicate but persistent floral profile. Notes of hibiscus, fresh herbs and a saline touch on the finish invite the next sip. There is no trace of wood or make-up: just naked Gamay, fluid and expressive. A true, uncompromising wine that celebrates lightness with depth. Ideal with fine charcuterie, roast poultry or simply for pure pleasure.
