Droin Chablis 1er Cru Montée de Tonnerre is a wine made exclusively from Chardonnay grapes, sourced from a 1.76 hectare plot of vineyards over 50 years old, located in the Chablis region of Burgundy, at an altitude of between 150 and 200 metres. The soils in this area are composed of clay and Kimmeridgian limestone, a type of soil rich in marine fossils, especially ostracods, which give the wine an exceptional minerality, a key characteristic of the best Chablis wines. This sustainably managed vineyard is regularly tilled to preserve the vitality of the soil.

Winemaking

Winemaking follows a traditional yet modern approach. The grapes are harvested by hand to preserve their quality, and undergo a gentle pneumatic pressing. After a natural decanting of 3 to 4 hours, fermentation is carried out using indigenous yeasts, in a combination of stainless steel tanks and French oak barrels. Approximately 40% of the wine is aged in barrels, 20% of which are new, which adds complexity without dominating the fruity aromas and freshness of the wine. Malolactic fermentation is carried out systematically, which helps to soften the acidity and add creaminess to the palate.

Taste

Droin Chablis 1er Cru Montée de Tonnerre has a remarkable minerality, a direct result of its unique terroir. On the nose, aromas of white flowers, orange peel, peach, spices such as nutmeg and soft hints of brioche and menthol stand out. On the palate, it is a medium to full-bodied, silky wine with a texture that combines freshness and concentration. The vibrant acidity and lingering saline finish are distinctive, bringing a structured and balanced elegance. As it ages (5 to 15 years), its aromatic profile becomes more complex, revealing layers of dried fruits, honey and greater depth in the mineral touches.
Droin Chablis 1er Cru Montée de Tonnerre is ideal with seafood, especially oysters and grilled lobster, due to its salinity and freshness, which enhances the flavours of the dish. It is also a wine for cellaring, capable of evolving favourably for more than a decade, showing at each stage new facets of its complex structure.
Montée de Tonnerre is considered one of the best Premier Crus in Chablis, thanks to its proximity to the Grand Cru vineyards and the meticulous attention of the Droin family, who have been cultivating the land since 1620.
