Aromas of yellow peach, apricot, orange peel and lime zest, complemented by subtle oak framing, introduce the 2024 Chablis 1er Cru Mont de Milieu, a medium- to full-bodied, textural and layered wine with a fleshy core of fruit, racy acids and an enveloping finish. As ever, it derives from a comparatively warm, south-facing site, and this year 25% was vinified in oak; it deftly harnesses the warmth of the site to its advantage in what is a markedly cool vintage.

Droin Chablis 1er Cru Mont de Milieu is a flagship wine from northern Burgundy, in the Chablis region, an area known worldwide for its exceptional white Chardonnay wines. This Premier Cru is located in one of the most privileged terroirs of the appellation, on a south-facing plot, which provides optimal exposure to the sun. This warm climate, together with soils rich in Kimmeridgian limestone, gives the wine a unique structure and a perfect balance between freshness and complexity.

Winemaking

Viticulture in this vineyard is carried out with a philosophy of respect for the environment, through a balanced approach to pest control and active soil management by ploughing. The vines, with an average age of 50 years, provide grapes of great concentration and character. Vinification is carefully carried out to preserve the purity of the fruit and the expression of the terroir. The use of indigenous yeast fermentation and partial ageing in barrels allows the wine to develop gradually and harmoniously, providing a subtle hint of oak without dominating the main aromas and flavours.

Taste

Droin Chablis 1er Cru Mont de Milieu stands out for its complexity and fullness on the palate. Initially, it presents notes of ripe white fruits such as pear and peach, accompanied by subtle floral aromas such as philadelphus and citrus hints of lime zest. With time in bottle, the wine develops a fascinating minerality, reflecting its origin in chalky soils. The saline nuances, together with aromas of oyster shells and a touch of sea air, add an extra dimension, which combines perfectly with its natural freshness and bright acidity.
This wine is known for its balance between body and acidity, which gives it a vibrant structure and a lingering finish. Its versatility allows it to pair with a wide range of dishes, from fish and seafood to white meats and fresh vegetable salads. As it ages, this Chablis becomes even more complex, making it worth cellaring for 7 to 10 years to appreciate its full evolution.
