Description
Dominio del Pidio Albillo Blanco is a wine made from the Albillo grape variety, which is characterised by its ageing process in wood. It comes from the Cillar de Silos winery in the Ribera del Duero Denomination of Origin.
The Dominio del Pidio Blanco wine was born under the idea of the brothers Óscar and Roberto Aragón, with the intention of recovering the ancestral legacy of 10 hectares of ancient vineyards and five underground cellars from the 16th century.
This wine is defined as a white wine of peasant tradition, which denotes the origin and age of the vines and the terroir, but with the power and elegance of a quality wine.
Winemaking
The Dominio del Pidio Blanco wine is made using agricultural techniques that respect the environment. During the harvesting phase, the grapes are hand-picked to ensure optimum ripening.
These grapes are taken to the winery where they undergo a gentle pressing process to obtain the must, which is then fermented in cement barrels. After that, it is left to vinify on its lees for 8 months in French oak barrels.
