Description
Christian Tschida Non Tradition Red is made in the Burgenland region, specifically in the Neusiedler See National Park, this wine is the rightful successor of Christian's former flagship wine called Domkapitel. Ironically, it does not meet the requirements of the Austrian Wine Law, and is therefore called "Non Tradition". The vines, which have been in Christian Tschida's family for four generations since the 19th century, grow on soils of sandy gravel, shale and limestone, allowing them to develop deep roots that seek water and nutrients, resulting in grapes with very intense flavours that reflect the terroir of the region.
Winemaking
The wine is made from Cabernet Franc grapes. These grapes are harvested by hand, destemmed and then crushed with the feet. Fermentation is carried out in vats with indigenous yeasts and without racking. The wine then spends 2 years ageing in large Stockinger oak vats, and is bottled without fining or filtering, and without the addition of sulphur.
Taste
Christian Tschida Non Tradition Red is a smooth and easy-drinking wine, but at the same time delicate and structured. It stands out for its notes of cherry jam and berries that are extremely fragrant and subtly envelop the palate. It has a pleasant acidity and that characteristic salty aftertaste of Tschida that is addictive. It is a wine that pairs perfectly with a peppery sirloin steak.
