Description

The idea of creating this Jura Chardonnay came from the meeting between Etienne Thiébaud and an ancestral micro-plot that exuded authenticity: the Les Lumachelles vineyard in Mouchard, just north of Arbois. Since 2007, Etienne has been cultivating - following organic, biodynamic and lunar calendar principles - these century-old vines (between 15 and 115 years old), full of history and life force. It was a bold decision: to trust in the soil of the French Jura, with its limestone, clay and marl soils, to express a Chardonnay that breathes purity. The proximity of the Loue River imposes a singular freshness and a microclimate that reflects, without compromise, the essence of the terroir.

Winemaking

Cavarodes Côtes du Jura Chardonnay Les Lumachelles embodies the modern "naturism" practiced by Etienne: spontaneous fermentations with indigenous yeasts, just a whisper of sulphur before fermentation begins. The wine is aged for 12 months on fine lees in large used oak vats, using the ouillage technique - adding wine to the barrel to prevent excessive oxidation. This approach preserves the freshness and tension of the wine, while allowing the Jura terroir to express itself precisely. Bottling is often done by leaving a slight amount of carbon dioxide to maintain the wine's vitality until the end.

Taste

In the glass, Cavarodes Côtes du Jura Chardonnay Les Lumachelles reveals itself as a symphony of mineral and citrus subtleties. The bouquet displays refined white fruit - without being overly opulent - with flashes of lemon, lime and a subtle echo of dried fruit, evoking almond or candied grapefruit peel. On the palate, the entry is smooth, fresh and luminous, supported by a noble acidity that polishes the palate with athletic precision. What follows is an elegant, saline, almost stony minerality that lends tension and a rigid but not hostile character.

This natural Chardonnay is slightly oxidative in texture, but maintains an encouraging nervousness: no hint of opulence, just a firm, transparent purity that recalls the most classic and serene Jura whites.
