Description
Domaine des Cavarodes was born in 2007, when Étienne Thiebaud - a tall, long-braided farmer who looks more like a bohemian artist - decided to abandon conventional logic and reconnect with the land. He learned in Burgundy, worked at Domaine de la Tournelle, and decided to found his winery in Cramans, in the Jura, with just 4.5 hectares of vines between 15 and 115 years old. The idea: to express the terroir without make-up, to respect the authenticity of a humble and spiritual region. He opted for organic and biodynamic practices, even using the lunar calendar, in a quasi-ritual gesture to cultivate the ancestral Poulsard grape variety, endemic to the Jura. The most decisive decision: to bottle without filtering, fining or adding sulphites - a commitment to purity, to naked terroir.
Winemaking
The Poulsard grapes from the Chemenot vineyard, planted on limestone and marl soils in the Arbois area, are harvested by hand and vinified with minimal intervention. This wine, Cavarodes Arbois Poulsard de Chemenot, is born of a precise winemaking process: after careful destemming, the must undergoes a very light carbonic maceration, fermenting with indigenous yeasts in search of freshness and identity. It then matures for 12 months in large French oak foudres, unfiltered and with no sulphur added at bottling. This extreme respect - natural, organic, vegan - is felt in every sip, as if the wine breathes its vineyard.
Taste
Served slightly chilled, Chemenot's Cavarodes Arbois Poulsard displays an elegance brimming with vibrant red fruits, strawberries and raspberries, and a subtle hint of violet, with an almost ethereal spicy touch. That fruity expression is supported by sparkling acidity and lively, light-textured energy, enlivened by an almost electric minerality. The finesse feels like a dance: light and fresh on the palate, so light that it seems to escape from the glass, but with nerve and character. Yes, there is a slight reduction on uncorking, but it evaporates on contact with air, releasing a tender array of aromas and flavours. The whole is rounded: pale red, pearly, fluid, with a clean finish that does not abuse the fruit, but lets its subtle nobility shine through. The texture is elegant, pure, with a spark of vitality that invites another sip. This Poulsard is one of those natural Jura wines that do not seek to impose, but to seduce slowly, with lightness and truth.
