Description
Cassot des Mailloles Comax Ethylix is a French red wine made with a majority Syrah grape variety and a minimal amount of Marsanne created by the Cassot des Mailloles winery in France.
The grapes come from a plot with a soil rich in granitic sandstone located at an altitude between 550 and 600 metres above sea level in the town of Tarerach.
This vineyard has been cultivated with certified organic farming techniques with permanent vegetation cover, work under the row with horses and with very moderate use of volcanic sulphur, copper and plant preparations.
Winemaking
The grapes are harvested by hand. Vinification is carried out in the winery after direct pressing of the grapes. The maceration is short, the grapes are fermented very slowly with indigenous yeasts and without temperature control in stainless steel tanks.
The wine is aged for about 6 months in stainless steel tanks. Unless otherwise indicated, the resulting wine is bottled without filtering, fining or sulphiting.
Taste
Cassot des Mailloles Comax Ethylix is a wine with floral and fruity aromas in continuous interaction with spicy notes. On the palate it has excellent structure, rich fruit and floral aromas, balanced acidity and soft tannins.
