Description
Cassot des Mailloles Soulà is a young red wine that has been elaborated with Grenache noir and mourvèdre in equal parts by the Cassot des Mailloles winery in the Roussillon region of France.
The grapes come from a 20 and 100 year old Grenache Noir and Mourvèdre estate, planted on a soil rich in granitic sandstone at an altitude between 550 and 600 metres above sea level.
This vineyard has been cultivated using certified organic farming techniques with permanent vegetation cover and very moderate use of volcanic sulphur, copper and plant preparations.
Winemaking
The grapes are harvested by hand. Vinification is carried out in the winery after direct pressing of the grapes. The maceration is short, the grapes are fermented very slowly with indigenous yeasts and without temperature control in stainless steel tanks.
The wine is aged for about 8 months in French oak vats. The resulting wine is bottled without filtering, fining or sulphiting.
Taste
Cassot des Mailloles Soulà is a wine with floral and fruity aromas in continuous interaction with spicy notes. On the palate it has an excellent structure, rich fruit and floral aromas, balanced acidity and soft tannins.

Cassot des Mailloles Soulà has been elaborated by the oenologist Jordi Pérez, who perpetuates the know-how of the winery and its philosophy of respecting the character of the grape variety for the enjoyment of wine lovers.
