Amós Bañeres Chaxiraxi Baboso Negro is made from 100% Baboso Negro, a rare and mysterious variety that finds a perfect refuge in the volcanic soils of Tenerife. The vines, planted at an altitude of 1,280 metres, survive in a soil of volcanic rock and clay that forces the roots to struggle, to dig deep, extracting the best from the earth. An extreme terroir for a wine that leaves no one indifferent.
Winemaking
The production of Amós Bañeres Chaxiraxi Baboso Negro follows this philosophy of absolute respect: manual harvesting, spontaneous fermentation with indigenous yeasts in small open vats and 12 months of ageing in used 300-litre barrels. No artifice or make-up, just the grapes and time working their magic.
