Description

Alvear Oloroso Asunción is a flagship wine of the Alvear winery, located in the Montilla-Moriles region, south of Córdoba, Spain. This wine is characterised by being a classic Oloroso, made from 100% Pedro Ximénez grapes, whose historical origins date back to the Rhine River in Germany. The Alvear vineyards, planted between 1920 and 1980, are located in the Superior Quality Sierra de Montilla, considered the Grand Cru sub-zone of Montilla-Moriles.
Alvear's viticulture focuses on sustainable practices, avoiding the use of harmful fungicides, pesticides, herbicides, fertilisers and irrigation. The albariza soil, rich in calcium carbonate and composed mainly of marl, provides an ideal terrain for growing these grapes. The semi-continental Mediterranean climate of the region, with extremely high temperatures and irregular rainfall, contributes significantly to the quality and unique characteristics of the wine.

Winemaking

Alvear Oloroso Asunción is produced from Pedro Ximénez base wine fermented to 15% alcohol in vats. After wintering, the wines are sorted for ageing and then fortified to prevent flor growth, before undergoing an average of 30 years of ageing in the soleras and criaderas system. Before being transferred to barrel, the wine is lightly sweetened (10 g/L) with sweet PX wine, providing a smooth roundness on the palate to balance the powerful profile of this oloroso.

Taste

Alvear Oloroso Asunción is a wine of great complexity and length. Its flavour profile includes notes of green almonds, salted nuts, dates, alcohol, dairy, honeyed figs, olives, sultanas and toffee. On the palate, its oxidative and sharp nature stands out, with a very light sweetness. This long ageing period significantly concentrates the wine, resulting in a high alcohol content and very high acidity, making it one of the most versatile wines for food pairings in the Alvear portfolio.
