Winemaking
Made exclusively from Chardonnay grapes, this Blanc de Blancs is a testament to varietal purity and expression. The grapes are harvested in a single pass, followed by careful pressing with a vertical press, ensuring a delicate and precise extraction. Fermentation and ageing take place in neutral toasted oak barrels, allowing the wine to develop its character without overlaying wood flavours.
Ageing on the lees for 33 months contributes to its complexity and texture, without the addition of sulphur at any stage of the process. This method highlights the purity of the wine, its clean, lively character and remarkable length on the palate, with an alcohol content of 12%.
