The red 2023 Guardaviñas was produced with Tempranillo from a plot he works biodynamically, 0.56 hectares in El Bardallo in San Vicente de las Sonsierra on limestone and sandy soils, produced without any additions, not even sulfur dioxide, throughout the process, which is stabilized by time and temperature. The destemmed but uncrushed grapes fermented with indigenous yeasts and then 40% of the volume matured in French oak barrels for 13 months and the rest was kept in stainless steel. It has good ripeness this year, when the grapes ripened thoroughly and developed more aromatic compounds, reaching 14% alcohol, with a pH of 3.5 and 4.59 grams of acidity. 2,151 bottles produced. It started a little rustic/earthy, but it settled in the glass to more precise and focused aromas. It has a medium- to full-bodied, balanced yet powerful palate with very fine, chalky tannins. 2,167 bottles produced. It was bottled in December 2024.

Description
The Abel Mendoza Sin Sulfuruso wine is a single varietal Tempranillo from the 0.56 hectare Bardallo plot, planted in 1979 and cultivated biodynamically.
The soil of the vineyard is clayey and sandy, ideal for the grapes!
Winemaking
The grapes are destemmed and fermented in tanks after manual harvesting. During one year, the wine matures for a period of one year in barrels and the other in tanks.
Flavor
It has aromas of fresh fruit with traces of bread aromas, which are typical of an adequate alcoholic fermentation. In the mouth it is robust, with noble tannins and very balanced.
No sulfur.
As the label indicates, no sulfur is added during the vinification and bottling processes. It must be made from Tempranillo grapes that are in excellent condition when they arrive at the winery. Now you can drink this crimson wine without embarrassment.
