Pierre Gimonnet Paradoxe 1er Cru Brut is a distinctive champagne within the maison Gimonnet, known for its focus on Blanc de Blancs. What makes it unique is its composition, with a predominance of Pinot Noir (90%) complemented by 10% Chardonnay. The vineyards where the Pinot Noir comes from are located in Mareuil-sur-Aÿ and Aÿ, while the Chardonnay comes from Chouilly in the Côte des Blancs. The combination of these varieties offers a wine different from the classic Gimonnet style. The soils are mainly chalky, which contributes to its mineral character.

Winemaking

In terms of winemaking, Pierre Gimonnet Paradoxe 1er Cru Brut follows a traditional fermentation process in stainless steel tanks, which helps to preserve the freshness of the fruit. It is aged for more than 30 months on its lees, which adds complexity and a creamier texture. The dosage is 6 grams per litre, which gives it a balance between acidity and sweetness without being overly dry.

Taste

On the palate, Pierre Gimonnet Paradoxe presents a mixture of rich and complex sensations. Aromas of brioche, butter and pastry notes stand out, complemented by a fruity background of green apple and lemon. It is a full-bodied, unctuous and rounded wine, showing remarkable length on the palate. The mineral touches, typical of chalky soils, add a fresh, nervy dimension, making it ideal to accompany both appetizers and seafood or poultry dishes.
