Cos Vittoria Rosso Delle Fontane is a wine of singular character, produced by the winery Azienda Agricola COS, located in Vittoria, Sicily. Founded in 1980 by Titta Cilia, Giusto Occhipinti and Cirino Strano, this winery has been a pioneer in the production of natural and biodynamic wines in the region. Cos Vittoria Rosso Delle Fontane is produced under strict biodynamic principles, using minimal intervention practices both in the vineyard and in the winery. This reflects a deep respect for the natural environment and the balance of the vineyard ecosystem.
Winemaking
Cos Vittoria Rosso Delle Fontane is a blend of two emblematic Sicilian grapes: Nero d'Avola ( 60%) and Frappato (40%), coming from the "Delle Fontane" vineyard. This vineyard is located on predominantly red and chalky soils, which give the wine a marked minerality and a unique complexity. The warm climate of the region, combined with biodynamic viticulture techniques, allows the grapes to reach optimum ripeness. Spontaneous fermentation with indigenous yeasts is used, and the wine is aged for two years in large Slovenian oak barrels, giving it a subtle oak influence, without dominating the fruity aromas and flavours.

On the nose, it shows aromas of red fruits such as cherry and plum, together with spicy notes of clove and toasted aniseed.
