Description

In Montilla Moriles, the sun is not merely a backdrop: it is a tool of the winery. Toro Albalá Don PX stems from that almost stubborn idea of turning light into substance, and from a bold decision: to let the Pedro Ximénez (100%) speak for itself through the raisining process, without wood to impart its scent or solera to dilute the character of the vintage. In this corner of Córdoba, where the tradition of fortified wine reigns supreme, Toro Albalá has chosen the purity of the raisined must and technical precision. The vineyard rests on white, calcareous soils capable of retaining the scarce summer moisture, and the dry, hot climate naturally concentrates what would be unthinkable in other latitudes: sweetness with backbone.

Production

For Toro Albalá Don PX, the Pedro Ximénez grapes are carefully selected and harvested by hand in mid-August; they are then spread out on mats or baskets in the sun for two weeks to dehydrate slowly, until the berries shrivel and the sugar becomes essence. They are gently pressed to obtain a dense, dark and fragrant must. The wine then rests for over a year in stainless steel vats: a maturation process that smooths out any rough edges and fixes the aroma, without adding any external notes. When the balance is just right, it is fortified with wine spirit and patiently clarified/decanted before bottling. The aim is singular: a sweet Pedro Ximénez wine with a youthful, direct and crisp profile.

Taste

In the glass, Toro Albalá Don PX flows slowly, a deep, brilliant amber, almost like a fine syrup. The nose is a whirlwind of Spanish sweet wine at its most serious: coffee, caramel, toffee, raisins and dates, with hints of fig and cocoa. On the palate it is full-bodied, silky and syrupy without being heavy; the acidity supports the sweetness and stretches it out, avoiding any cloying sensation. The finish is very long, warm, with notes of toasted sugar and smooth coffee, with that 17% alcohol content that warms rather than burns. A PX to drink slowly — and to remember.
