Description
Toro Albalá Solera 5 Años Eléctrico has its roots in a story that could only happen in Andalusia: Toro Albalá’s original winery was set up in the area’s first power station, and the locals used to joke that the wine ‘had electricity’ in it. Since 1922, this fino has been a part of people’s lives, bar scenes and after-dinner chats, but not as a museum piece: as a lively, sharp, thirst-quenching wine. There is no blend of grapes here: it is 100% Pedro Ximénez, from the Montilla Moriles PDO, where the sun beats down and organic ageing becomes an art of patience.
Production
In Toro Albalá Solera 5 Años Eléctrico, the grapes are harvested to form the base of the fino, and from there, biological ageing takes over under a flor veil: a layer of yeast that protects and ‘cooks’ the wine in silence, imparting that distinctive bakery and nutty character. It is aged in criaderas and solera for 5 years, seeking consistency and vigour, not artificial enhancement. The 15% alcohol content is achieved naturally, without added fortification, and it is bottled to preserve its briny edge.
Flavour
Toro Albalá Solera 5 Años Eléctrico has a straw-yellow colour with greenish highlights. On the nose, the flor appears first: bread crumb and crust, like a bakery just opened, followed by a dry stream of almond and toasted notes. With a breath of air, hazelnut and a subtle spice, like clove, emerge – no sweetness, no compromise. On the palate it is dry and persistent: measured acidity, marked salinity and a clean, taut finish that leaves you wanting another tapa. A true Eléctrico fino: straight to the point, perfect with olives, seafood, fried fish or Iberian cured meats.
