Description
Thomas Perseval La Masure is not a fireworks Champagne: it is a precision wine born of Thomas Perseval' s character and his stubborn reading of the vineyard. When he took over the family vineyards in Chamery (Premier Cru), in the heart of the Montagne de Reims, in 2003, he chose a less comfortable path: working the soil, organic viticulture and an almost surgical search for the identity of each plot. The idea for this wine comes as a radical "yes" to the place: a Champagne that does not want to make up, but to reveal. In a mosaic of soils with clay, sand and silty limestone, and a cool climate that lengthens ripening, Perseval pursues tension, salinity and a measured fruit, without tricks. His bold decision - and his signature - is clear: Brut Nature, without dosage, when many still seek to round off with sugar. Here the grapes must be perfect. In the glass, the wine rests on the structure of the Pinot Noir, with a counterpoint of Chardonnay (depending on the lot and disgorgement), always in the key of the vineyard.
Winemaking
At Thomas Perseval La Masureida, the grapes go in with the ambition of not losing any nuances. We work with minimal intervention, allowing the wine to find its balance. Ageing in wood does not seek to "mark the wood", but to breathe and gain texture: 225 and 400 litre barrels are used for approximately 8 months. Afterwards, the wine is refined with patience: ageing on lees in the bottle for long periods(minimum 45 months), to integrate the bubbles and build depth without weight. The result is bottled with a vocation for purity and precision.
Taste
At Thomas Perseval La Masure, brioche does not rule here. The nose opens with crisp red fruits, a trace of white flowers and an herbaceous wink reminiscent of fresh stems; underneath, a saline and almond hint that makes you salivate. The palate is dry, vertical, with high acidity and integrated bubbles: more "vinous" than festive. Green apple and clean energy appear, and the finish is long, austere and mineral, one of those that do not sweeten the memory: they sharpen it.
