Description
Thomas Perseval La Pucelle is not born as "just another Champagne", but as a statement: to show the Pinot Meunier of Chamery without make-up. In the Premier Cru heartland of the Montagne de Reims, Thomas Perseval is obsessed with a small hillside - the "La Pucelle" plot - where old vines take root in deep, sandy and silty soils, capable of giving an earthier, more tactile pulse than pure chalk. The idea for the wine came about as an almost counter-current gesture: to bottle the place as it is, without seeking immediate praise. It is said that, in one of the first runs, he preferred to take a more austere approach rather than "fix it up" with sugar: a zero dosage without excuses, because the plot had to speak with its own voice. Here character rules: Brut Nature, nerve and precision. The base is around 90% Pinot Meunier (with micro-adjustments depending on the vintage), worked as if it were a plot champagne.
Winemaking
At Thomas Perseval La Pucelle, the grapes go in with a clear idea: minimum intervention and maximum reading of the soil. Delicate pressing, clean musts and spontaneous alcoholic fermentation with indigenous yeasts to preserve identity. The cuvée is aged for 8 months in 225 and 400 litre oak barrels, without seeking wood make-up, but rather texture and depth. Then comes the second life in the bottle: a minimum of 45 months ageing on lees before disgorging, when the bubbles are refined and the wine gains that silent volume that only time can give. Disgorgement is the culmination of the house philosophy: Brut Nature, without expedition liqueur to round off the edges, leaving the vineyard's traces intact.
Taste
In Thomas Perseval La Pucelle, it is immediately obvious that this is not a gastronomic Champagne with an easy perfume. A serious nose to start with: wet stone, fine chalk, an earthy background and a hint of discreet toast. With air, the wine opens up towards tense citrus fruits - lemon and grapefruit - and a crisp, crisp, slightly baked apple. The palate enters straight, vibrant, with an acidity that stretches the whole like a steel cable. The bubbles are very fine and persistent, pushing citrus rind, white fruit and a salinity that cleanses and calls for another sip. The finish leaves a noble bitterness - grapefruit peel, almond - dry and elegant, the signature of the great Brut Nature. Long, mineral, uncompromising: the more it breathes in the glass, the more it counts"
