R. Pouillon Les Valnons Grand Cru Extra Brut is an exceptional champagne that stands out for its uniqueness and quality. This wine, made by Fabrice Pouillon, is a Blanc de Blancs from a single plot in the village of Aÿ-Champagne. What makes it particularly special is that it is composed of 100% Chardonnay, a rare blend for this terroir, as Aÿ is mainly known for its Pinots Noirs.
Winemaking
The production of R. Pouillon Les Valnons Grand Cru Extra Brut is characterised by a careful and detailed process. The Chardonnays come from the "Les Valnons" parcel of the terroir classified as Grand Cru of Aÿ-Champagne. This champagne seeks to represent the best of this vineyard planted on clay-limestone loam soil, typical of the historic hillsides of Champagne. It is aged in oak barrels, which adds roundness and richness to the delicate blend of Chardonnay, and then aged for 5 years in the Maison's cellars. After disgorging, Les Valnons is dosed as Extra-Brut at 3 g/L, highlighting the finesse and purity of its aromatic notes.
