Names of the old bottlings tend to vary (they are highly creative at Toro Albalá!) and the old Amontillado is now presented as 1952 Amontillado Convento Palma. It has the character of a very old wine, with traces of the biological aging under flor, certainly more pungent and sharper than the Palo Cortado I tasted from 1964. There is, as I have seen in other vintages, a sensation of sweetness on the finish (but no aromas of sweet wine), that kind of softens the sharpness. It could very well be the pure concentration from old age. They expect to eventually fill some 3,400 bottles with this wine.

In Aguilar de la Frontera, in the very heart of the Montilla Moriles PDO, Toro Albalá has been practising a form of quiet courage for over a century: preserving. Preserving casks, preserving vintages, preserving time. Its origins date back to 1844, but the gesture that best defines its character came in 1922, when the family converted an old abandoned power station into a winery: a place offering shade, coolness and subterranean calm, perfect for the wines to learn to speak slowly.

Toro Albalá Marqués de Poley Amontillado Convento Selección is born precisely from that philosophy: not to chase the immediate, but to let history settle in the glass. Here the grape is Pedro Ximénez (100%), grown in albariza soils—limestone marl with an enormous capacity to retain moisture—a white sponge that sustains the vine in a climate of long, dry and very hot summers. The idea of producing (and, above all, preserving) these ‘double-labelled’ gems is almost an act of faith: selecting exceptional casks and accepting that the wine is not finished when it ferments, but when time decides. In Poley Convento Selección, that decision results in a rare gem, refined over decades: a fortified wine of great complexity, purity and depth.

Production

At Toro Albalá Marqués de Poley Amontillado Convento Selección, this amontillado is born from the finest finos: first, it undergoes a period of biological ageing under a flor; when the flor is lost, the wine begins its long journey towards oxidative ageing, in this case statically, and that moment is what determines the wine’s ‘vintage’. It is fortified to 21% ABV and continues to age in American oak casks, where oxygen enters in small doses and gradually refines the wine: concentrating, darkening, polishing and drying it. The result is bottled in 20 cl bottles, almost like a vial of essence: a small quantity of a wine that has spent more time in wood than many wines spend in existence.

Flavour

In Toro Albalá Marqués de Poley Amontillado Convento Selección, the glass glows amber with coppery highlights and a greenish glint that betrays its lineage. The nose is a sharp whiff of a well-ventilated old cellar: toasted and smoky notes, hazelnut, and then a deeper twist—plum,candied fruit—as if the wine were recalling (very faintly) that life under the flor. On the palate there are no concessions: a dry, light and elegant attack, yet with a bite that tugs at the tongue. The acidity underpins the whole structure and ensures the wine moves forward with a straight line, without any greasiness, with an almost saline precision. And then comes what purists fall in love with: that salinity that is not salt, but soil; albariza transformed into savouriness. The finish leaves a finely bitter, sophisticated, very long echo, like a noble smoke that refuses to fade away.
