Description
Lolita Couscous is a spectacular and thoughtful proposal that invites tasting. This cuvée has been produced in collaboration with Nicolas Renaud of Clos des Grillons. It is a 100% Cinsault wine from young vines grown organically on chalky soils near Rochefort-du-Gard, west of Avignon.
Winemaking
The grapes were harvested by hand in mid-August and underwent carbonic maceration in whole cluster for a week. This was followed by a gentle pressing and a short ageing in stainless steel tanks. It was bottled in mid-October of the same year with no additives or sulphites added.
Taste
Couscous presents itself as a "light" wine, with a fresh aroma that stands out for its notes of small red fruits. On the palate, it has almost no tannins, letting the purity of the fruit shine through, offering a super fluid and airy juice.
