2/3 of the grapes are directly pressed and the rest (1/3) is fermented with whole bunches with 3 weeks of skin soaking. Bottled without added sulphites.
Description
Karnage Vi Novell is bottled in the Jura region of France, however, the Muscat d'Alexandria grapes come from Vincent Lafage, located in Canet, Languedoc-Roussillon.
Winemaking
Spontaneous fermentation with wild yeasts where 2/3 of the harvest is pressed directly, while the remaining 1/3 is macerated whole cluster, within the pressed Muscat must, for 3 weeks. It is then pressed and rested in stainless steel tanks until bottling in November. No sulphites are added during its production.
Taste
Vi Novell is characterised as a wine with a broad aromatic profile. Thanks to the maceration of the Muscat variety, this wine is generous in floral and fruity aromas, accompanied by a long and rounded texture.
