Description

A Montgueux breeze has been blowing from the very first moment the idea of making this unique rosé was born. Emmanuel Lassaigne, champion of forgotten terroirs, decided to give a voice back to this limestone hill in southern Champagne. His vision was clear: to capture the mineral purity of Montgueux and bring it to the language of rosé. With a base of Chardonnay - the village's emblematic variety - and a small proportion of Pinot Noir vinified in red, Jacques Lassaigne Rosé de Montgueux Extra Brut is the result of organic farming practices and minimal cellar intervention. The vines grow on white chalk soils with streaks of clay, in a continental climate that accentuates the tension and natural acidity of the fruit.

Winemaking

The grapes for Jacques Lassaigne Rosé de Montgueux Extra Brut are harvested by hand and gently pressed. Fermentation is carried out with indigenous yeasts, without the addition of enzymes or corrections. The cuvée is aged for 12 to 24 months in used barrels, without filtration or fining, which preserves the rawest expression of the terroir. After blending with the Pinot Noir, it rests in the bottle for at least three years before being disgorged by hand. The dosage is minimal, in line with its Extra Brut profile, and the result is a fine, vibrant, almost aerial bubble.

Taste

To the eye, Jacques Lassaigne Rosé de Montgueux Extra Brut shows a pale salmon hue with coppery highlights that heralds its elegance. The nose is precise and discreet: subtle raspberry, grapefruit zest and light floral notes. On swirling, aromas of red apple, lemon zest and a mineral depth reminiscent of wet chalk emerge. On the palate, the attack is dry, sharp, with a sharp acidity that runs across the palate like a chalk line. Red fruit appears in the background, while salinity, citrus freshness and a creamy bubble build a taut, refined structure. The finish is long, with echoes of ripe red fruit, notes of toast and a slight citrus bitterness that adds character.
