Description
When Aubert and Pamela de Villaine decided to leave the grandiloquence of the Côte de Nuits to settle in Bouzeron, they set themselves a challenge: to express the purity of the Chalonnais terroir without artifice. Thus was born Domaine de Villaine Rully 1er Cru Raclot, made exclusively with Chardonnay from a tiny plot of 0.40 ha, planted on clay-limestone soils and with 25-year-old vines. Located in the Côte Chalonnaise, this area offers a cooler and less ostentatious microclimate than its northern neighbours, resulting in more subtle but intensely defined wines. Since 1986, the estate has been practising certified organic farming: no herbicides, no pesticides, no unnecessary interventions. A philosophy centred on respect, which prioritises the truth of the soil over the embellishment of the technique.
Winemaking
Manual harvesting and rigorous selection mark the beginning of a process that favours precision. Fermentation of Domaine de Villaine Rully 1er Cru Raclot is carried out with indigenous yeasts in demi-muids and old barrels, without the use of new wood, avoiding any influence that might obscure the wine's identity. Subsequently, Domaine de Villaine Rully 1er Cru Raclot is aged for 12 to 18 months in these same vats, refining its structure without gaining artificial volume. Bottle ageing for a further year completes the process, bringing integration and complexity through patience, not intervention.
Taste
In the glass, Domaine de Villaine Rully 1er Cru Raclot is delicate, with a nose of lime, white pear and subtle flowers, over a mineral background reminiscent of wet chalk. There are hints of ripe white fruit, such as fresh peach and green apple, along with a barely perceptible hint of butter, the result of its long ageing on lees without marked malolactic fermentation. On the palate, the entry is dry, direct, with a vibrant acidity that structures without attacking. There is tension, precision and a texture that balances finesse and persistence. It does not seek to seduce with volume, but to convince with clarity. The finish is long, marked by an elegant salinity and a citrus echo that cleanses and prepares for the next sip. A Burgundian Chardonnay without make-up, where the minerality of the soil speaks louder than any oak.
