Description
Clandestina Orange Censurat is a wine produced at the Bodegas Clandestinas winery by the young winemaker Ferrán Lacruz. This winery is located on an 8-hectare plot of land planted with local grapes in a small village in the Penedés wine region called Sant Martí Sarroca.
Winemaking
Orange Censurat wine is made from the use of Cariñena Blanca grapes, which, after being harvested, are pressed in stainless steel tanks and then fermented with the addition of indigenous yeasts.
This process is carried out for two weeks, ensuring that the fruit is always in contact with the skins.
During this period of time, manual movements are carried out once or twice a day, after fermentation has finished. The wine is transferred to 160-litre clay amphorae where it is aged for 5 months and then bottled without fining, filtering or adding sulphur.
Taste
The Clandestina Orange Censurat wine is characterised by being strong, dry and with slight floral touches, defining itself as a harmonious wine. It has a delicate roundness due to the fruit used, where the grape must determines the fruity, spicy, liquorice and citrus flavours and aromas, giving it the unique touch that characterises it.
The wine has aromas of raw red fruits with smoky tones, so it has a bitter component that dominates its bouquet.

It is a wine that puckers a little in the mouth due to the combination of dry and spicy tannins that give it its characteristic taste between spicy, citric and salty. It is perfect for accompanying Asian dishes or those that include fish.
