Description
Cascina Tavijn Toc wine is an experimental line that varies according to the production of the vintage, inaugurated by Cascina Tavijn with Toc#1. In the local dialect, "toc" means "crazy", reflecting the bold adventure Nadia decided to undertake. The protagonist of Toc#1 is the Slarina, a very rare native variety that was on the verge of disappearing. It was included in the national register of Italian vine varieties only a decade ago. Few brave producers have decided to present it to the public in a single varietal version.
Winemaking
The grapes come from a small farm specialised in the preservation of endangered grape varieties, located in the province of Turin. They are then vinified in the Cascina Tavijn winery.
The Slarina grapes come from a young vineyard planted on clay in Pinerolo. The grapes are carefully destemmed and ferment spontaneously for two months with the skins(semi-carbonic maceration) in closed tanks with a small proportion of must at the bottom of the tank. The wine is then pressed and rests for 6 months in tanks before bottling unclarified, unfiltered and with crown cork.
Taste
On the palate, acidity prevails, followed by a slight tannic note and an almond finish. It is a must for those who prefer fruity, aromatic and easy to drink red wines. Slarina is a variety that has been rediscovered and promoted by producers such as Nadia Verrua. It has a beetroot-like colour, with a damp earthy aroma. Its flavour is bold, with remarkable acidity and an effervescent palate.
