The red 2023 El Templari was produced with grapes from the local variety Morenillo, which they started recovering at the end of the 1990s, a variety that was mostly abandoned after phylloxera because of its pale color and low alcohol, which is now an advantage in the increasingly warmer and drier Mediterranean climate. They planted it in a shady, north-facing plot 25 years ago, and it delivers delicate reds with notes of pomegranate and dry roses. It fermented with indigenous yeasts in stainless steel for 18 days and matured exclusively in clay jars for six months. However, the pungent aromas of raw meat, tempera paint, ink and leather were too overpowering, and the palate showed some dryness too. It comes in at 12.5% alcohol and with a pH of 3.69. 3,050 bottles produced. It was bottled in July 2024.
