Description

Borsao Zarihs is a single varietal red wine made from Syrah grapes grown in the vineyards of Bodegas Borsao in the Campo de Borja DO, Aragón. This variety, which has a large presence in countries such as Australia and South America, has found in the climate and soil of Moncayo a perfect environment for its adaptation and development. The wine takes its name from the term "Shiraz" spelled backwards, in honour of the grape variety used.
The vineyards were planted in 2002 in the foothills of the Moncayo, at an altitude of between 600 and 700 metres above sea level. This location offers optimal conditions thanks to the limestone soils and the influence of the Cierzo, a strong wind that blows more than 200 days a year, helping to ventilate and dry the grapes from flowering to ripening. The climate of the region is predominantly continental, with large temperature variations between day and night, which favours a slow and balanced ripening of the grapes.

Winemaking

Borsao Zarihs is made under the supervision of Australian winemaker Chris Ringland and Spanish winemaker José Luis Chueca, who have collaborated in the creation of this wine. The maceration process lasts between 4 and 5 days, followed by a controlled fermentation of 15 to 20 days at temperatures ranging between 22º and 26ºC. Once fermented, 40% of the wine is aged in American oak barrels for 12 months, which gives the wine spicy notes and a more complex structure. The other 60% remains in stainless steel tanks to preserve the freshness of the fruit.

Taste

Borsao Zarihs is characterised by a deep, opaque colour with red-black and purple tones. On the nose, intense aromas of black fruits, such as blackberries and plums, accompanied by hints of smoke and sweet vanilla from its oak ageing. Over time, the wine develops subtle notes of dark chocolate and espresso. On the palate, it is full-bodied, with soft tannins and a silky passage, dominated by flavours of wild blackberries and coffee. The finish is medium-long, with balanced acidity and a hint of spice that gives it great versatility in food pairings, especially with grilled meats, pasta and rice dishes.
