Description
The world of champagne is vast and diverse, but there are a few gems that shine in their own right. One of those jewels is Champagne André Beaufort Polisy Brut Nature Derriere l'Eglise. This exquisite champagne is made from 100% Pinot Noir grapes from a single vineyard located behind the church of Landreville, hence the name "Derrière L'Église". This champagne is produced only in the best vintages, which guarantees its exclusivity and superior quality.
Winemaking
The production of this champagne is an art in itself. After a careful manual harvest, the grapes are pressed and the must is decanted for 12 hours in specific containers, allowing the coarser particles to settle to the bottom. Spontaneous fermentation takes place in steel vats and wooden barrels. In their quest for perfection, the Beaufort family favours spontaneous malolactic fermentation for their base wines, avoiding the excessive use of sulphites. The second fermentation in the bottle follows the Champenoise method, and the wine rests on its lees for 24 months. A detail that stands out is the disgorging à la volée technique used by Beaufort, an ancestral technique from the Champagne region.
Taste
As you bring the glass to the nose, aromas of ripe yellow fruit, berries and tropical fruit are revealed. On the palate, it is simply haunting. The palate has a broad, enveloping, creamy texture. Fruit, freshness and salinity combine in a delicious mix that provokes sublime emotions. It is an austere but well-balanced champagne, with impressive balance and remarkable roundness. The finish is persistent, leaving a lasting memory.
