They shortened the élevage of the white 2021 Pedra de Guix to 11 months, and they also stopped using the 1,800-liter foudre, where the wine partially aged in the past, and now it's matured in concrete vats (diamond-shaped ones!). The wine is floral, vertical and a lot less oxidative than even the 2019, which is less oxidative than previous years. It's a different profile of wine with very good depth and freshness. Funnily enough, this 2021 has a little more alcohol than the 2019 (13.5%), but the wine feels lighter on its feet. 4,008 bottles produced.

Description
Dominik Huber wanted the first white wine in his Terroir al Límit range to show the transcendental heights and the essential importance of whites in Mediterranean cuisine. Thus Terroir al Límit Pedra de Guix was born. An "oxidative" counterpoint to Terra de Cuques, Guix is a blend of old vines of the region's most important white varieties: Pedro Ximenez, Macabeo and Garnacha Blanca. Steep slopes and concentrated fruit, along with a traditional approach in the cellar.
Winemaking
After manual harvesting, the whole bunches are gently basket pressed, fermented in concrete tanks and then aged for 8 months in concrete. The Pedro Ximenez is left alone to undergo controlled oxidation before blending.
Taste
Terroir al Límit Pedra de Guix 's hands-off biodynamic approach reflects a flavour that captivates over time, revealing a velvety smooth beauty that drifts with waves of citrus, nuts and flowers across the palate. It is rich, smooth and ripe. As it oxygenates, it becomes fresher in the glass, developing tension and depth. A mouth-watering salinity stands out, faithfully expressing the soils of the region: clay, alluvial and slate. It is an authentic expression of tradition and origin, which is not limited to being a simple wine to serve and drink.
