Winemaking
Maceration of skins for 2 weeks with whole bunches. Fermented with indigenous yeasts in old barrels. Aged for 8 months in used 225 and 300 litre barrels. Bottled unfined, unfiltered and without added sulphites.
Description
Strohmeier Cat-Silver wine takes its name from the silicate stones with thin shiny layers found in the soil of all Strohmeier vineyards. These stones reflect the essence and character of this wine, which is a representation of all the grape varieties and vineyards they work with.
The varieties that make up this wine are a reflection of the diversity found in Strohmeier's vineyards. It includes white grapes such as Sauvignon blanc, Pinot blanc, Chardonnay, Bronner, Muscaris and Büten-Muskateller. But it does not stop there, it also incorporates pink grapes such as Sauvignon Gris and red grapes such as Zweigelt, Blauer Wildbacher, Cabernet, Merlot, Rösler and Regent. These grapes come from a blend of vineyards located in St.Stefan, Stainz and Bad Gams, with soils rich in Opok (calcareous marl) and gneiss.
Winemaking
Strohmeier Cat-Silver is a blend of skin-fermented and direct-pressed grapes. Alcoholic and malolactic fermentation takes place spontaneously in wooden barrels. Surprisingly, the wine is bottled after a short ageing of only 8 months in the same barrels, which is early by Strohmeier standards. A small dose of sulphur (15 mg/l) is added and no fining or filtration takes place.
Taste
Strohmeier Cat-Silver is a cloudy, fun wine in which red and white varieties co-ferment. It is fruity, with a distinctive tannic structure and good liveliness. Undoubtedly, it is a wine with a strong personality, which puts the focus on the soil and not on the fruit. It leaves traces of peach and apricot soap, with a savoury, edgy, characterful flavour. Although it may lack the energy that some would expect in a natural wine in this price range, it has bitter grapefruit notes on a watery finish.
