Description
On the sunny slopes of Bonastre, just six kilometres from the Mediterranean, Eduard Pié cultivates his vines with an almost ascetic sensibility. His project, Sicus, has become synonymous with radical authenticity and minimal intervention. Sicus Sons Cartoixà Vermell was born as an experiment deeply rooted to the place: made only with Cartoixà Vermell -a rosé mutation of Xarel.lo Vermell- grown in the El Sitgetí vineyard, planted 33 years ago at 220 metres above sea level. Here, the silt-limestone soil, deep and slightly alkaline, acts as a sounding board for a wine that is a pure reflection of its surroundings.
Since its beginnings, Eduard has made decisions that defy convention. The most audacious: fermenting the wine in amphorae buried directly in the vineyard. This ancestral method, taken to an extreme of purity, seeks to eliminate any artifice between the grape and the wine.
Winemaking
After a manual harvest, the bunches destined for Sicus Sons Cartoixà Vermell are gently broken without destemming and placed whole in earthenware amphorae buried in the vineyard itself. They are sealed and remain there for three months, fermenting and infusing without temperature control, without pumping over, without intervention. When the amphorae are opened in December, only the free-run juice is extracted, without pressing. The wine is then transferred to the cellar, where it rests for a further four months before bottling, without fining or filtering. No additives. No masks.
Taste
Sicus Sons Cartoixà Vermell is more than just a tasting experience. The nose is sharp and restrained, marked by a vibrant salinity, with notes of pink grapefruit, bitter orange peel, dried thyme and wet stone. A whisper of tart red fruits - pomegranate, wild strawberry - appears in the background, enveloped in a halo of rooibos infusion and raw almond.
The palate is dry, austere, with tense, perfectly delineated acidity. The texture is tactile, like peach skin or clay dust, with an elegant rusticity that makes it challenging but tremendously addictive. The finish is long, lingering, marked by a mineral, saline and earthy echo, as if capturing the wind from the sea and the dust from the soil in every sip.
A wine for those who seek the essential. Raw, vibrant, uncompromising. A Mediterranean jewel in its most naked form.
